Mango Bread

Preheat oven to 350 F.

¾  c.  oil

1 ¼  c.  sugar

eggs

Beat oil and Sugar. Add eggs one at a time and beat.

2 c.   flour

2 tsp.  baking Soda

½  tsp.  salt

2 tsp.  cinnamon

Sift together dry ingredients and add to egg mixture. Mix by hand for about 3 minutes.

2 c.  ripe mangoes

1 tsp.  vanilla

½  c.  chopped nuts

Add mangoes, vanilla, and nuts and mix until well blended. Pour into 9”x5”x3” loaf pan and bake between 45-50 minutes.
